text: Plant-based meat alternatives continue to gain market relevance due to sustainability,
ethical, and health considerations. However, replicating the texture, cohesion,
and sensory attributes of animal-derived meat remains a major technological challenge.
Microbial transglutaminase (mTGase), an enzyme that catalyzes covalent cross-linking
between glutamine and lysine residues in proteins, has emerged as a promising
structuring tool for improving protein network formation in plant-based systems.
Produced via microbial fermentation, mTGase is calcium-independent and active
across a broad range of food-processing conditions. This review summarizes the
mechanism of action of mTGase, its reactivity toward major plant protein sources,
and its functional role in comminuted, emulsified, and structured plant-based
meat products. Particular emphasis is placed on the integration of mTGase with
physical structuring technologies such as extrusion and shear-cell processing.
Overall, mTGase represents a versatile enzymatic strategy for enhancing texture
and cohesion while reducing reliance on synthetic binders in clean-label plant-based
    meat alternatives.

text: Depending on the oil production technology, at least 60% of the oilseeds input
such as sunflower, pumpkin or canola remain as by-product, which is usually denoted
as press cake (PC) and contains a significant amount of fiber and protein. Its
further valorization in food requires knowledge on the technofunctional properties
of the press cake and on possibilities for improving its value. Aim of the current
study was to evaluate the effect of two separation techniques, namely targeted
sieving and air classification, on composition, and physical as well as technofunctional
properties of fractions of sunflower press cake previously milled to <1.0 mm or
<2.0 mm. It is evident for both separation techniques that fines fractions obtained
by using smaller sieves or lower air volume flow showed an increased protein content,
with a protein enrichment factor of up to 1.47. Using PC < 2.0 mm as raw material,
protein separation efficiency, a combined measure for protein content and yield,
was higher after separation by air classification. Whereas protein solubility
was not affected by the particle size distribution of the separated fractions,
emulsion activity and emulsion stability were improved especially for the small
particle fractions separated from PC < 2.0 mm.

text: Wet granulation is a frequent process in the pharmaceutical industry. As a
starting point for numerous dosage forms, the quality of the granulation not only
affects subsequent production steps but also impacts the quality of the final
product. It is thus crucial and economical to monitor this operation thoroughly.
Here, we report on identifying different phases of a granulation process using
a machine learning approach. The phases reflect the water content which, in turn,
influences the processability and quality of the granule mass. We used two kinds
of microphones and an acceleration sensor to capture acoustic emissions and vibrations.
We trained convolutional neural networks (CNNs) to classify the different phases
using transformed sound recordings as the input. We achieved a classification
accuracy of up to 90% using vibrational data and an accuracy of up to 97% using
the audible microphone data. Our results indicate the suitability of using audible
sound and machine learning to monitor pharmaceutical processes. Moreover, since
recording acoustic emissions is contactless, it readily complies with legal regulations
    and presents Good Manufacturing Practices.

text: Due to the demographic aging of society, the demand for skilled caregiving
is increasing. However, the already existing shortage of professional caregivers
will exacerbate in the future. As a result, family caregivers must shoulder a
heavier share of the care burden. To ease the burden and promote a better work-life
balance, we developed the Digital Case Manager. This tool uses machine learning
algorithms to learn the relationship between a care situation and the next care
steps and helps family caregivers balance their professional and private lives
so that they are able to continue caring for their family members without sacrificing
their own jobs and personal ambitions. The data for the machine learning model
are generated by means of a questionnaire based on professional assessment instruments.
We implemented a proof-of-concept of the Digital Case Manager and initial tests
show promising results. It offers a quick and easy-to-use tool for family caregivers
in the early stages of a care situation.

text: For environmental, sustainable economic and political reasons, recycling processes
are becoming increasingly important, aiming at a much higher use of secondary
raw materials. Currently, for the copper and aluminum industries, no method for
the non-destructive online analysis of heterogeneous materials is available. The
prompt gamma neutron activation analysis (PGNAA) has the potential to overcome
this challenge. A difficulty when using PGNAA for online classification arises
from the small amount of noisy data, due to short-term measurements. In this case,
classical evaluation methods using detailed peak by peak analysis fail. Therefore,
we propose to view spectral data as probability distributions. Then, we can classify
material using maximum log-likelihood with respect to kernel density estimation
and use discrete sampling to optimize hyperparameters. For measurements of pure
aluminum alloys we achieve near-perfect classification of aluminum alloys under
    0.25 s.

text: The feasibility of inline classification and characterization of seven fruit
juice varieties was investigated by the application of near-infrared spectroscopy
(NIRS) combined with chemometrics. The findings are intended to be used to optimize
the flash pasteurization of liquid foods. More precise information of the kind
of product in real time had to be achieved to enable a more product-specific process.
Using the method of partial least squares discriminant analysis, the fruit juice
varieties were classified, showing a classification rate of 100% regarding an
internal and 69% regarding an external test sets. A characterization by the extract
content, pH value, turbidity, and viscosity was made by fitting a partial least
squares regression model. The percentage prediction error of the pH value was
<3% for internal and external test sets, and for the Brix value prediction errors
were about 4% (internal) and 20% (external). The parameters viscosity and turbidity
were found to be unsuitable. Despite this, the strategy applied to gain more product-specific
information in real time showed to be feasible. By linking the results to a database
containing potentially harmful microorganisms for various types of fruit juices,
a more product-specific calculation of the necessary heat input can be performed.
To demonstrate the practical relevance, a comparison between conventional and
product-adapted process control was performed using two fruit varieties as examples
in case of Alicyclobacillus acidoterrestris. Thus, with more accurate product
information, achieved through the use of NIRS with chemometrics, a more precise
calculation of the heat input can be achieved.

text: Along with the constantly increasing complexity of industrial automation systems,
machine learning methods have been widely applied to detecting abnormal states
in such systems. Anomaly detection tasks can be treated as one-class classification
problems in machine learning. Geometric methods can give an intuitive solution
to such problems. In this paper, we propose a new geometric structure, oriented
non-convex hulls, to represent decision boundaries used for one-class classification.
Based on this geometric structure, a novel boundary based one-class classification
algorithm is developed to solve the anomaly detection problem. Compared with traditional
boundary-based approaches such as convex hulls based methods and one-class support
vector machines, the proposed approach can better reflect the true geometry of
target data and needs little effort for parameter tuning. The effectiveness of
this approach is evaluated with artificial and real world data sets to solve the
anomaly detection problem in Cyber-Physical-Production-Systems (CPPS). The evaluation
results also show that the proposed approach has higher generality than the used
    baseline algorithms.

text: ' In real-world scenarios it is not always possible to generate an appropriate
number of measured objects for machine learning tasks. At the learning stage,
for small/incomplete datasets it is nonetheless often possible to get high accuracies
for several arbitrarily chosen classifiers. The fact is that many classifiers
might perform accurately, but decision boundaries might be inadequate. In this
situation, the decision supported by marginlike characteristics for the discrimination
of classes might be taken into account. Accuracy as an exclusive measure is often
not sufficient. To contribute to the solution of this problem, we present a margin-based
approach originated from an existing refinement procedure. In our method, margin
value is considered as optimisation criterion for the refinement of SVM models.
The performance of the approach is evaluated on a real-world application dataset
for Motor Drive Diagnosis coming from the field of intelligent autonomous systems
in the context of I ndustry 4.0 paradigm as well as on several UCI Repository
samples with different numbers of features and objects.'

text: 'Hutchinson and Löffler''s (1956) classification of lakes based on the seasonal
thermal mixing regime has become a cornerstone of any analysis of lakes as elements
of the earth surface. Until now however the lake classification has lacked a physically
sound quantitative criterion distinguishing between two fundamental lake types:
thermally stratified during a large portion of the year (mono- and dimictic) and
predominantly mixed to the bottom (polymictic). Using the mechanistic balance
between potential and kinetic energy we review the different formulations of the
Richardson number to derive a generalized scaling for seasonal stratification
in a closed lake basin. The scaling parameter is the critical mean basin depth,
Hcrit, that delineates lakes that mix regularly from those that stratify seasonally
based on lake water transparency, lake length, and an annual mean estimate for
the Monin-Obukhov length. We validate the scaling on available data of lakes worldwide
using logistic regression. The scaling criterion consistently described the mixing
regime significantly better than either the conventional unbounded basin scaling
or a simple depth threshold. Thus, the generalized scaling is universal for freshwater
lakes and allows the seasonal mixing regime to be estimated without numerically
    solving the heat transport equations.'

text: Sensor and information fusion is recently a major topic which becomes important
in machine diagnosis and conditioning for complex production machines and process
engineering. It is a known fact that distributed automation systems have a major
impact on signal processing and pattern recognition for machine diagnosis. Therefore,
it is necessary to research and develop smart diagnosis methods which are applicable
for distributed systems like resource-limited cyber-physical systems. In this
paper we propose an new approach for sensor and information fusion based on Evidence
Theory and socio-psychological decision-making. We show that context based condition
monitoring is instantiated even in conflict situations, oc-curing in real life
scenarios permanently. A simple but effective importance measure is proposed which
controls the significance of conditioning propositions in a system.

text: Maintaining confidence in security documents, especially banknotes, is and remains a major concern for the central banks
in order to maintain the stability of the economy around the world. In this paper
we describe an image processing and pattern recognition approach which is based on the Sound-of-Intaglio concept [1] for the usage in smart devices such as smartphones. Today, in many world regions smartphones are in use. These devices become more and more computing
units, equipped with resource-limited but effective CPUs, cameras with illumination,
and flexible operating systems. Hence, it appears to be obvious, to apply those smartphones for banknote authentication, especially for visually
impaired persons. However, it has to be researched, whether those devices are
capable of processing the data under the constraints of image quality and processing
power. Our results show that it is in general possible to use such devices for
    banknote authentication applications.

text: In this paper we propose a novel, extended perspective on evidential aggregation
rules in machine condition monitoring. First, aspects regarding the interconnections
between Dempster-Shafer, Fuzzy Set, and Possibility Theory are shown. Subsequently,
a novel approach for direct determination of basic probability assignments using
Fuzzy membership functions is proposed. Finally, it is applied to a pipe extrusion
line's condition monitoring system, considering and reducing pairwise conflicts.

text: In this paper, we sketch an idea for the integration of singleclass support
vector machines (SVM) into fuzzy class learning. As result,we obtain robust and transparent rule-based fuzzy classification models
suitable for online-classification tasks. In particular, the singleclass SVM is
employed to extend the applicability of convex fuzzy classifica-tion models to
nonconvex datainherent structures. The key point of thisextension is the preservation of the interpretability for both, the classlearning
and the classification process. The feasibility of the approach isdemonstrated
in the context of a banknote authentication application.

text: The present work aims at a statistically motivated parameterisation for a
fuzzy classification approach. Its key points are the determination of robust
parameterisations for the data-driven fuzzy class learning based an statistical
analyses as well as the preservation of the interpretability of the fuzzy class
models and the classification process. In particular, order statistics and Monte
Carlo methods are used to determine distributions and moments of class border
parameters. These distributions and moments are further applied to evaluate the
robustness of parameters of the current fuzzy classification model and to propose
alternative robust parameterisations. The feasibility of the approach is demonstrated
in the context of a machine diagnosis application.

text: Many of the existing fusion approaches based on Dempster-Shafer Theory (DST)
tend to be unreliable in various scenarios. Therefore, this topic is still in
discussion. In this work a Two-Layer Conflict Solving (TLCS) data fusion scheme
is proposed which is based on Dempster-Shafer Theory and on Fuzzy-Pattern-Classification
(FPC) concepts. The aim is to provide an approach to data fusion which provides
a stable conflict scenario handling. Furthermore, the scheme can easily be extended
to fuzzy classification and is applicable to sensor fusion applications. Therefore,
the suggested approach will contribute as a novel fuzzy fusion method.

text: It is likely in real-world applications that only little data isavailable
for training a knowledge-based system. We present a method forautomatically training
    the knowledge-representing membership functionsof a Fuzzy-Pattern-Classification
system that works also when only littledata is available and the universal set
is described insufficiently. Actually, this paper presents how the Modified-Fuzzy-Pattern-Classifier’s
member-ship functions are trained using probability distribution functions.

text: A robust vision system for the counterfeit detection of bank ATM keyboards
is presented. The approach is based on the continuous inspection of a keyboard
surface by the authenticity verification of coded covert surface features. For
the surface coding suitable visual patterns on the keyboard are selected while
considering constraints from the visual imperceptibility, robustness and geometrical
disturbances to be encountered from the aging effects. The system’s robustness
against varying camera-keyboard distances, lighting conditions and dirt-and-scratches
effects is investigated. Finally, a demonstrator working in real-time is developed
in order to publicly demonstrate the surface authentication process.

text: 'During printed product manufacturing, measures are taken to ensure a certain
level of printing quality and security via authentification methods. This is particularly true in the field of security printing, where the quality standards, which must
be reached by the end-products, i.e. banknotes, security documents and the like,
are very high. It is accepted, that print defects are generated because printing parameters but also machine parameters will change unnoticed
in production. Therefore, a new concept for a multi-sensory adaptive learning
and classification model based on Fuzzy-Pattern-Classifiers for data inspection, authentification and machine conditioning is proposed. This kind of inspection
concept, which combines optical, acoustical and other machine information, produces
a large amount of data, which leads to multivariate methods for data analysis.
Multivariate methods are useful for analysis of large and complex data sets that consist of many variables measured on large numbers of physical data. A general aim is to improve the known inspection techniques and propose an inspection methodology that can ensure a comprehensive quality control of the printed substrates processed by printing presses, especially printing presses which are designed to process substrates
used in the course of the production of banknotes, security documents and others. '

text: In this paper, a fuzzy pattern classification tuning approach is proposed,
which is based on fusion concept. In this method, tuning parameters are learned
in a training procedure, enabling system to be capable of managing individual
classification task. Fuzzy c-means, as a specific instance of Tuning Reference,
is employed as a tool to offer membership function which is used for making decisions
and its membership function fuses (tunes) another membership function captured
from fuzzy pattern classification and then final decisions are made upon fused
one. Experiments are taken on five benchmark datasets, one of them shows an equal
performance and the other four present better results than each single classifier.

text: 'Bank note inspection is a complex task. As more and more print techniques
and new security features are established, total quality security and bank note
printing must be assured. Therefore, this factor necessitates change of a sensorial
concept in general. We propose an optical-acoustical inspection method based upon
the concepts of information fusion and fuzzy interpretation of data measures.
Furthermore, we present a simplified scheme for information fusion for pattern
recognition and data classification based on parametrical unimodal potential functions
and a Sugeno-type score value analysis. Digital Object Identifier: 10.1109/ICIF.2006.301779

text: Nonlinear spatial transforms and fuzzy pattern classification with unimodal
potential functions are established in signal processing. They have proved to
be excellent tools in feature extraction and classification. In this paper we
present a hardware accelerated image processing and classification scheme for
rotation and translation tolerant two-dimensional pattern recognition, which is
based on one-dimensional nonlinear discrete circular transforms. However, the
scheme is simple; it is stable and therefore well suited for industrial applications.
An implementation on one field programmable gate array (FPGA) is proposed.

text: Nonlinear spatial transforms and fuzzy pattern classification with unimodal

be excellent tools in feature extraction and classification. In this paper, we
will present a hardware-accelerated image processing and classification system
which is implemented on one field-programmable gate array (FPGA). Nonlinear discrete
circular transforms generate a feature vector. The features are analyzed by a
fuzzy classifier. This principle can be used for feature extraction, pattern recognition,
and classification tasks. Implementation in radix-2 structures is possible, allowing
fast calculations with a computational complexity of up to. Furthermore, the pattern
separability properties of these transforms are better than those achieved with
the well-known method based on the power spectrum of the Fourier Transform, or
on several other transforms. Using different signal flow structures, the transforms
can be adapted to different image and signal processing applications.

In
der Anwendung der Druckbildinspektion erweist sich das Mustererkennungssystem
    als praxisgerecht einsetzbar.

text: ' Image retrieval, texture analysis, optical character recognition and
general inspection tasks are of main interest in the field of image processing
and pattern recognition. Methods which operate automatically are of interest in
the above mentioned areas. Therefore, translation invariant transforms are helpful
tools for pattern recognition tasks. Nonlinear spatial transforms and fuzzy pattern
classification with unimodal potential functions are established in signal processing.
They have proved to be excellent tools in feature extraction and classification.
In this thesis nonlinear discrete transforms, which are adaptable for different
application tasks, will be presented. The adaptivity includes the group specific
behaviour, the amount of calculations and the implementability in application
specific integrated circuits. The pattern separability properties of these transforms
are better compared to that of the well known power spectrum of the Fourier transform
and several other known transforms. Furthermore, a hardware accelerator image
processing and classification system will presented, which is implemented on one
field programmable gate array (FPGA). The system can be used for feature extraction,
pattern recognition and classification tasks. In the field of printed image inspection
the system is applicable under practical aspects.'
