<abstract lang="eng">Dataset from 8 recombinant yeast P. pastoris laboratory bioreactor fermentations producing Hepatitis B surface (HBsAg) antigen (exps. 1-4) and Hepatitis B core (HBcAg) antigen. An in-situ permittivity probe (Hamilton, Incyte) was used in these experiments for permittivity and conductivity data logging.</abstract>
