Development of a concept for the production, slaughter, processing and marketing of organically produced boars along the entire value chain
Goal: The project deals with the development of a concept for the production, slaughtering and processing of organically produced boars along the entire value chain. The investigations include the feeding and husbandry of organically produced boars in accordance with animal welfare and requirements in order to minimise boar odour, the development of a practical detection method in the area of slaughtering and processing, as well as the creation of process instructions for the production of sensorially inconspicuous products from odour-active boar meat under organic conditions.
